Unnifeta Pasta

  Unnifeta pasta is a pasta made with a sauce made from baked feta cheese and cherry tomatoes.It was supposedly created by Finnish blogger named Jenni Häyrinen in 2019 and it also led to a feta cheese shortage in Finland because EVERYONE was making it!! I mean how cool is that??? The pasta saw another round of viral acclaim on Tiktok in 2020. Having no access to Tiktok anymore thanks to the move(Yes we have moved and that is for another day!!) I had no clue about it till it slowly moved to insta in 2021. Of course I had to attempt it but there is a funny story to that as well. The recipe called for mainly a block of feta cheese, cherry tomatoes and fresh basil. Simple right? Just pop into a grocery store, pick up or order online. Or so I thought but no, it wasn't as simple. Feta cheese wasn't something you just pick off the shelf in a local market and online said I had to wait for a few days till they sourced it. Baked Coconut chicken

I've made this one twice already.No adaptation or tweaks. Exactly the way it is, the flavours are pretty unusual. Made by Vanessa Mehri from swahilifood.com who also happens to be someone I know from S's school, this one is slowly on its way to becoming a family favourite. I plan to try it with fish sometime. Ingredients: Whole chicken:1(or use about 6 whole thighs like I did the first time) Salt:2 tbsp Pepper: 2 tbsp Butter: 1tbsp Oil: 1 tbsp Butter: 1 tsp Lime rind: 1 tbsp Turmeric: 1/2 tsp Chilli flakes: 1/4 tsp Cardamon: 3 pods Garlic: 1 tsp, crushed Cinnamon powder: 1/2 tsp Tomato paste: 1 tbsp Coriander: a handful Coconut milk:1&1/2 cups Lime-1 Method: -Clean the chicken well, butterfly, and rub the salt and pepper. -Add butter in a pan, add the oil stir and add the chicken skin side down and let it fry for about 10 minutes flipping in between. Today’s dinner was inspired by the Korean boiled dumplings known as Mul Mandu which literally means water dumplings. Did it taste authentic? I wouldn’t know because I’ve never really had the authentic version therefore I say inspired but this was at soul comfort level so I enjoyed what I ate as did the kids. The recipe was adapted and tweaked from my favourite FB food blogger(Sarita).In fact I did my two bits of research after seeing her post, having never heard of something like this before. I had my first taste of koshari at this restaurant here in Muscat called Kusharina. With pasta and tomatoes, chickpeas what was not to like?? Maybe it is my Middle-eastern upbringing but I love anything that has chickpeas and tomatoes in it :) Today as I stepped into the kitchen with the intent of making pasta, I realized that we didn't really have enough for everyone. Then I noticed the can of chickpeas staring at me and the packs of tomato puree and the bottle of masoor dal and suddenly my brain put all that randomness together and brought back this little memory of koshari tucked away deep deep deep deep deep inside!! It's funny how you strike a chord with certain recipes and this is one such recipe. I happened to see this post on insta(Thanks Maria Goretti!) and couldn't wait to try it. It was something she had tweaked from her friend's recipe and sounded pretty interesting. I had to tweak it a little as well because the spice level seemed a bit too much for the kids. A chutney chicken! All you need is: Chicken bone-in- I used about 6 big pieces Garlic-lots! Mensakai was something that I ate whenever I was in India back in my grandma's house especially when we had food at the temple. I had no clue what it was called back then. It was just something that was sweet, sour, tangy, and spicy all at the same time!! I used to call it mensinkai which I later got to know was green chillies in Kannada and obviously not connected to my Konkani mensakai. Having lost my grandmother years ago and not visited India or having a temple meal in forever, I had literally forgotten about this gem until a few weeks ago when my mom's friend brought in some for us (Thanks Jayshree) and you know how the universe conspires to bring you closer to what you wish for right? S was born on diwali-dhanteras to be precise so I always think of him as my diwali present.I love planning an (tr)eats hamper.I started presenting them to friends in 2017.This was my first one: It had: Phenori Coconut laddoo Besan fudge Nimki Ajwain mathris and what I call my 'showstopper' motichoor cheesecake Recipe(s) as follows: 1) Phenori: To make dough Maida-1 cup Fine rava-1 cup Ghee- 2 tbsps Salt- a pinch Maida to dust Oil to deep fry For paste Rice flour-2 tbsp Ghee-3 - 5 tbsps To Serve Powdered sugar-1/2 cup Powdered cardamom Method: In a wide bowl take maida ,rava and salt. Mulled wine

I had my first taste of mulled red wine at a Christmas do in Muscat and was in love!Luckily I also managed to get hold of the recipe of what went in it that day(Thanks Sylvie!) All you need is:(for about a liter of red wine) 1 big whole cinnamon stick 1 Nutmeg 4 Cloves Simmer these in about 300 ml of water for about 10 minutes and turn of the gas.Add slices of 2 oranges and let seep. My late grandmother lived most part of her childhood in Burma.I have very few memories of her.But the one thing I do remember is that she was an amazing cook and genes probably play a massive role in this because my dad is as well.There is a saying in our house that when my dad throws things in a pot,it automatically turns into the most delicious food.My grandmother's cooking style was supposedly heavily influenced by Burmese cuisine and khao suey was something she used to make very often.It went on to become dad's comfort food when she was gone and there was this one week when he made it three times in a row and we began to call it Hatrick!He no longer bothers with the 'frills' associated with khao suey anymore,it's just the noodles and gravy and on some occasions crunchy garlic.But from what I remember it used to be a feast,a celebration of sorts so I decided to try and get the 'joie de vivre' if you please,of khao suey,one weekend at home.The kids fo...

Nutella cheesecake

I absolutely adore Nigella Lawson and needed an excuse to use her Nutella cheesecake recipe .Found a perfect one in the form of husband's birthday!I did it exactly as said and it turned out absolutely delish. It was also extra special because S (big boy at 5 now!) helped out in the making. All you need is: 250 grams digestive biscuits (McVities always!!) 75 grams soft unsalted butter  1 x 400 grams jar nutella (at room temperature) 100 grams chopped toasted hazelnuts 500 grams cream cheese (at room temperature) (I used Kiri squares) 60 grams icing sugar (sifted) Break the digestive biscuits, add butter and about 3tbsp of Nutella, and blitz until it starts to clump. Add 25g/3 tablespoons of the hazelnuts and continue to pulse until you have a damp, sandy mixture. Tip into round springform tin and press and flatten into the base.Place in the fridge to chill. Mommy friendly mojito :)

I can't remember the actual story behind why this was called mommy friendly but this recipe is by a friend(Thanks Tara!) and has zero alcohol.It used to be my -pick me up- after the kids went to bed. All you need is: 1 part bitter lemon, 1 part ginger ale, fresh mint and lime slices crushed with sugar, served on ice I used Schweppes bitter lemon and ginger ale which works perfectly well. Quick fix Nutella dessert

Some days call for a quick yet no fuss desserts,this one is for such days :) All you need is: 1 packet of whip cream mix 2-3 digestive biscuits(I use McVities always!)  2 tbsp Nutella 1 tsp drinking chocolate powder(I say this because I used Cadbury's drinking chocolate else use cocoa and sugar)(optional) Patience! Make the whip cream as per instructions on the box.Fold in Nutella. Crush digestive biscuits using a rolling pin. Take a glass or a tall bowl and start layering alternatively between digestive biscuits and Nutella/whip cream mixture.Make sure the digestive biscuit is the last layer at the top.Sprinkle the chocolate powder on top if you want an extra choco zing.Refrigerate this for about 20 mins,this is where patience comes of great use!Enjoy!
